The Origin of the Possum Cookie

Okay, I know what you're thinking. What on earth is a possum cookie? Why are those two words even used in the same sentence? Why, why, why? Well, stick around, because I'm about to explain everything. So, I come from the south. Like, THE south. With Sunday dinners and baking competitions and the whole nine. My family loves to bake. Cakes, pies, cookies you name it. My dad is a cookie man. He loves cookies. The possum cookie is his special recipe, one that he passed down to me. The cookies are actually named after my mom. She's an avid night-time snacker who, like a sneaky little possum, would wake up while everyone else was asleep and eat all the cookies. Hence, the origin of the possum cookie and even more so the origin of my love for cookie-making.


Would you try a possum cookie? Do you think you could look past the strange name? You should!! And, like the generous southerner I am, I'm including the recipe below.


Possum Cookie Recipe

Estimated prep time: 10-15 min

Bake time: 12 min at 350 degrees


Ingredients

- 1 bag of Betty Crocker Oatmeal Chocolate Chip Cookie Mix

- 1/2 cup of Butterscotch Morsels

- 1/4 cup White Chocolate Chips

- Ghirardelli Dark Chocolate Bar

- 1/2 Stick Softened Butter

- 1 Egg


METHOD

- Add the cookie mix, softened butter, and egg together in a bowl and mix

- Add both the butterscotch and white chocolate chips to the bowl

- Grate the chocolate bar, or chop finely into pieces, and add to the bowl

- Mix it together!

- Scoop out cookie dough and place on well-greased pan

- Bake for 10-12 minutes at 350 degrees
